  2. 750 gram mutton mix boti
  3. 5 onion slices
  4. 1 tbsp Garlic paste
  5. 1 tbsp Ginger paste
  6. Whole Garam Masala
  7. 2 black cardamom
  8. 4 green cardamom
  9. 5-6 cloves
  10. 1 cinnamon stick
  11. 1 bay leave
  12. 6-7 black pepper corns
  13. 1 star anise
  14. 1 small piece of nutmeg
  15. 1 piece javitri
  16. 1 glass water
  17. Dry Spices
  18. 1 tbsp crushed cumin
  19. 1 tbsp coriander powder
  20. 1 1/2 tsp black pepper powder
  21. 1 1/2 tsp white pepper powder
  22. 1 tsp all spice powder (Garam Masala Powder)
  23. 4-5 dry plum
  24. 1 cup yogurt whipped
  25. For Rice
  26. 1 kg Basmati Rice
  27. 2 tbsp salt
  28. 1 tbsp vinegar
  29. Whole dry spices ( black pepper, black cardamom, cloves cinnamon
  30. Few mint leaves
  31. Other condiments for Garnishing
  32. 1 tomato slices
  33. 1 lemon slices
  34. 4-5 green chillies chopped
  35. Green coriander leaves
  36. Mint leaves
  37. For Rice layering
  38. 4-5 red chilli button
  39. Curry leaves
  40. 2 tbsp oil

Instructions to make to make White Mutton Biryani

  1. Wash and clean the mutton mix boti.
  2. Cut the onion in thin slices. Gather all dry spices.
  3. In a wok heat oil add onion with all whole spices.
  4. Fry for 5 minutes until translucent.
  5. Now add mutton, ginger garlic paste and bhonify together for 10 minutes.
  6. Add water and cover the lid, cook on low heat until mutton is 70 % cook.
  7. Meanwhile take a bowl add yogurt and all dry spices,dry plum and mix well.
  8. Once meat looks soft, add a cup of masala whipped yogurt and potato together. Cook more for half hour on medium flame.
  9. White mutton masala is ready.
  10. Mean while, take a big pot for rice. Fill it up with water and put on stove. Add in whole dry condiments (black pepper, cardamom, cumin, cloves, cinnamon) with mint leaves. Once the water starts boiling, add soaked rice, salt and vinegar. In 10 to 15 mins, rice gets done. Strain it with strainer.
  11. Take the same big pot, pour oil and add some red button chilli and curry leaves. Fry for a while then start layering.
  12. Now layer with half of the rice and gravy
  13. Add tomato slices, coriander leaves, lemon slices
  14. Add green chillies chopped and mint leaves
  15. Repeat one more layer. Place the coriander leaves, tomato, green chilli, lemon slice and mint leaves on top.
  16. Cover with the remaining rice.
  17. Sprinkle some black pepper and all spice powder on top.
  18. Cover the lid for dum.
    Place on low heat flame on stove then place a flat tawa underneath it and simmer for 20 minutes minutes on low flame. After dum like this it becomes so tempting and aroma starts spreading all over my kitchen 😍
